Clear Mountain Mama's Oatmeal, Chocolate Chip and Flaxseed Cookies
Makes 6 dozen or so cookies, takes 30 minutes to assemble, 30 minutes to bake.
These cookies are great for pregnant or nursing mamas (yes, they help lactation), athletes, little ones, and papas (anyone who needs to feed the machine well). Guaranteed to disappear fast, they are low in sugar, high in nutrients, protein, and all the right stuff.
The Right Stuff:
1 whole ripe banana and 1/3 cup apple juice- blended together into a sticky mess.
¾ cup real butter, warmed and cut up into thin slices.
*¼ cup molasses
¾ cup brown sugar (up to 1 cup)
4 Tbsp water
*2 Tbsp flaxseed meal
2 large eggs
1 tsp vanilla
2 cups flour (gluten free ok)
1 tsp baking soda
1 tsp salt (optional)
*3 cups oats, thick cut if possible (Bob's Red Mill has gluten free oats)
1 ½ cups dark chocolate chips
*2 Tbsp brewers yeast (up to 3 T) (yes there is Gluten free brewers yeast: it's labelled)
Directions:
Preheat oven to 375 deg F.
Mix together flaxseed meal and water, set aside.
Cream/beat well butter and banana/juice/molasses/sugar. Add eggs one at a time, miling well.
Stir flaxseed mixture well, add vanilla – stir in to the butter mixture. Beat until blended.
Sift together flour, baking soda, salt, and add to the butter mixture.
Stir in oats well and then chips.
Scoop or drop onto a baking sheet, preferably lined with parchment paper to prevent bottom browning too much. Dough will be a little crumbly, use of a scoop will help.
Bake 8-12 minutes, depending upon size of cookie.

Healthy Banana Cake Recipe
Ingredients
75g (1/3 cup) softened butter
110g (1/2 cup) caster (superfine granulated) sugar (put granulated sugar in a food processor and you get caster).
1 large beaten egg
225g (2 cups) plain flour (or use a vegan baking mix and no extra baking powder)
2 level tsp baking powder
grated rind of 1 orange and 1 lemon (optional)
4 ripe bananas
50g (1/2 cup) chopped walnuts
1/4 cup dark chocolate chips
Method
Grease and base-line a loaf tin measuring 8.5 by 19cm (1 lb capacity), or set 12 paper muffin cases into a muffin tin. Heat the oven to 350F/180C/gas 4.
Put butter, caster sugar and egg into a bowl. Sift in flour and baking powder. Using an electric mixer, whisk until thoroughly combined. Add the grated lemon and orange rind if using.
Slice the bananas into another bowl, and mash to a pulp. Add to the flour mixture, along with the walnuts and whisk again thoroughly.
Spoon the mixture into the tin or cases and bake until risen and browned, and springs back when pressed with a finger. A loaf takes about 50 minutes. Muffins take 15-20 mins.
Leave cake to cool in the tin for 10 minutes before turning on to a wire tray.
Morning Smoothie
1 frozen banana
1/2 cup froz blueberries
1/3 apple
1/3 orange or tangerine
3-4 organic strawberries
3/4 cup yogurt
1/4 cup peanut butter
2T choc chips
Aloe vera juice and apple juice and rice milk - in any quantity, go for the consistency you like!
Toss it all into the blender or Vitamix, blend until done!
